Two varieties available:
Vialone Nano is grown in the best areas in provinces Verona and Mantua and maintains its shape and texture after cooking. It absorbs seasonings well and is recommended for all types of risottos. Excellent in thin soups, too!
Farro is a heartier grain with a nutty taste and a chewy texture. Great for adding heartiness to soup, pilaf, risotto, stuffing, and grain salads. It is a wheat-like grain that is rich in fiber, high in protein and vitamins A, B, C, and E, and low in gluten.
Arborio rice is named after the town of Arborio in the Piedmont region of Italy. Of the different Italian rice varietals, Arborio is the most common. Compared to Vialone Nano, it has a slightly lower starch content which will make a difference in the ratio of liquid to rice to reach your desired risotto consistency.
