True Southern Grits


  • 1/2 cup grits
  • 2 1/2 cups water
  • 1 1/2 cups of heavy cream
  • 4 tablespoons unsalted butter
  • 1 tsp salt
  • black pepper


  1. Find the directions from the grits package and discard
  2. Add the grits and water to a pot and stir, allow to settle
  3. Skim off the chaff from the top of the water
  4. Bring water & grits to a boil
  5. Lower heat and simmer for 45 minutes, stirring frequently and adding water if necessary
  6. Mix in heavy cream and butter
  7. Continue to simmer, stirring constantly
  8. When desired consistency is reached, add salt and pepper to taste
  9. OPTIONAL:  Add cheese if desired.  Sharp chedder, American, even Parmesan are all really good, the amount depends on personal taste!
