True Southern Grits
Ingredients:
- 1/2 cup grits
- 2 1/2 cups water
- 1 1/2 cups of heavy cream
- 4 tablespoons unsalted butter
- 1 tsp salt
- black pepper
Directions
- Find the directions from the grits package and discard
- Add the grits and water to a pot and stir, allow to settle
- Skim off the chaff from the top of the water
- Bring water & grits to a boil
- Lower heat and simmer for 45 minutes, stirring frequently and adding water if necessary
- Mix in heavy cream and butter
- Continue to simmer, stirring constantly
- When desired consistency is reached, add salt and pepper to taste
- OPTIONAL: Add cheese if desired. Sharp chedder, American, even Parmesan are all really good, the amount depends on personal taste!
