White vinegar is the perfect base for the raspberry flavor. It is lighter so it lets the more delicate flavor of raspberries shine through. I also like that it doesn't turn everything dark - as does balsamic. Through the winter, raspberries often lack their full flavor and this dressing enhances their taste in a lovely way... In summer with berries at their height, it just adds to the flavor.
Especially tasty during the long northern winters to remind of my ever bearing red raspberry bed.
