This is my secret weapon when it comes to Thanksgiving Brussels sprouts that even the kids beg for. Leading up to Thanksgiving, I bought several different trial-size flavors of white and dark balsamic vinegars. I focused on flavors like pomegranate, cinnamon pear, etc. but the employee at the store recommended that I try Espresso. I have a few chef friends, and I did a blind taste test with reducing each flavor of vinegar into a glaze. The clear winner was this espresso flavor. For that Thanksgiving, I roasted the Brussels sprouts while I reduced the Espresso balasmic vinegar (4tbsp) with a little bit (1bsp) of honey or maple syrup in a small skillet on the stove. I coated the Brussels sprouts just before serving, and everyone RAVED over the dish - even the children. Now at every family event, the family BEGS me to bring them.
